Ingredients

For the Bulgogi Bowls
  • 1 lb ground beef (90/10 lean)
  • 1/3 cup low-sodium soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 4 stalks green onions, thinly sliced
  • 1 tablespoon neutral oil (like avocado or canola)
  • 2 cups steamed white or brown rice for serving
  • 1 cup shredded carrots for serving
  • 1 cup sliced cucumber for serving
  • 2 tablespoons sesame seeds for serving

Method

Preparation
  1. In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, black pepper, and red pepper flakes. Set this bulgogi sauce aside.
  2. Heat the neutral oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and cooked through, about 5-7 minutes. Drain any excess fat if desired.
  3. Pour the prepared sauce over the cooked beef. Stir well to combine and let it simmer for 2-3 minutes until the sauce thickens slightly.
  4. Remove from heat and stir in most of the sliced green onions, saving some for garnish.
  5. Serve the saucy beef over warm rice, topped with fresh veggies, remaining green onions, and sprinkle with sesame seeds.

Notes

Great source of high-quality protein. Customize with various toppings like kimchi or a soft-boiled egg.
