Noodles and Vegetables
  • 8 oz noodles (spaghetti or tagliatelle)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 14 oz can diced tomatoes
  • 1/2 cup red wine
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Parmesan cheese for serving

Method
 

Cooking the Noodles
  1. Cook the noodles according to package instructions, then drain and set aside.
Sautéing Vegetables
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Stir in the minced garlic, bell pepper, and zucchini; sauté until tender.
Creating the Sauce
  1. Add the diced tomatoes, red wine, and red pepper flakes. Simmer for 10 minutes to allow flavors to meld.
Combining and Serving
  1. Toss in the cooked noodles, mixing well to coat. Season with salt and pepper.
  2. Serve hot, garnished with fresh basil and a sprinkle of Parmesan cheese.

Notes

This dish pairs wonderfully with a side salad or garlic bread. You can use any fresh vegetables you have. Adjust red pepper flakes for spice level. For creaminess, stir in heavy cream at the end. Leftovers can be stored in an airtight container for up to three days.
