Ingredients
  

For the Blueberry Syrup
  • 1 cup fresh or frozen blueberries
  • 2 teaspoons water
  • 1/2 tablespoon sweetener (maple syrup or agave nectar)
For the Latte Assembly
  • 3/4 cup ice cubes
  • 3/4 cup plant-based milk
  • 1-1½ teaspoons matcha powder
  • 1/4 cup hot water

Method
 

Preparation of Blueberry Syrup
  1. In a small saucepan, combine blueberries and water, cooking over medium-high heat for about 5 minutes. Stir frequently, mashing the blueberries until they become saucy. Remove from heat and mix in the sweetener.
  2. You can either blend the mixture for a smooth syrup or strain it through a fine mesh colander for a smoother drink. Allow the blueberry sauce to cool for a few minutes.
Matcha Preparation
  1. In a small cup, whisk matcha powder with hot water until smooth.
Assembling the Drink
  1. In your serving glass, layer the blueberry syrup at the bottom, add ice cubes, pour in the plant-based milk, and top with the matcha mixture. Stir with a straw and enjoy immediately.

Notes

Serve it in a tall glass with a straw. Add a few fresh blueberries on top for a nice touch. You can store leftover blueberry syrup in the fridge for up to three days. The matcha mixture is best enjoyed fresh, but you can whisk it again if it separates.
