  • 1 pound smoked beef or turkey sausage, sliced into rounds Any smoked sausage can be used.
  • 1 pound baby potatoes, halved
  • 1 cup baby carrots
  • 1 each red bell pepper, chopped
  • 1 each yellow bell pepper, chopped
For the Glaze
  • 2 tablespoons olive oil
  • 2 tablespoons honey For added richness, consider doubling.
  • 3 cloves garlic, minced
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons fresh parsley or green onions for garnish Use for finishing touch.

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. In a small bowl, whisk together the honey, minced garlic, and low-sodium soy sauce to create the glaze.
Cooking
  1. On the prepared sheet pan, combine the sliced sausage, halved baby potatoes, baby carrots, and chopped bell peppers.
  2. Drizzle the olive oil over the mixture and toss well to ensure everything is evenly coated.
  3. Spread the ingredients in a single layer and roast for 20-25 minutes until the vegetables are tender and the sausage is browned.
  4. Remove from the oven, pour the honey-garlic glaze over the pan, and toss to coat.
  5. Return to the oven for 2-3 additional minutes to caramelize.
  6. Garnish with fresh parsley or green onions before serving.

Notes

This dish is fantastic on its own, but serve it with rice or a fresh salad for extra balance. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
