  • 2 tablespoons olive oil For sautéing

Method
 

Preparation
  1. In a large saucepan, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and cook for an additional minute.
Cooking
  1. Add the canned tomatoes (with their juice), tomato paste, oregano, basil, salt, pepper, and sugar.
  2. Bring the mixture to a simmer and let it cook uncovered for about 30 minutes, stirring occasionally until thickened.
  3. Use an immersion blender to puree the sauce until smooth, or leave it chunky if you prefer.
  4. Allow the sauce to cool before canning or storing in the refrigerator.

Notes

Experiment with fresh herbs for a brighter taste. Add a pinch of red pepper flakes for some heat. Adjust the thickness by cooking longer for a thicker sauce. Try using different types of tomatoes for varied flavors.
