Main Ingredients
  • 2 cups shredded chicken Use rotisserie chicken for convenience.
  • 1 package gnocchi (16 oz) Cook only until they float for best texture.
  • 2 cups vegetables (carrots, celery, spinach) Feel free to adjust based on what you have.
  • 4 cups chicken broth Use gluten-free if needed.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 2 cloves garlic, minced
  • 1 teaspoon Italian herbs
  • to taste Salt and pepper
  • as needed Olive oil for cooking For sautéing.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Stir in shredded chicken and vegetables, cooking for about 5 minutes.
  4. Add chicken broth and bring to a boil.
  5. Stir in the gnocchi and cook until they float to the top.
  6. Reduce heat and mix in heavy cream and Italian herbs.
  7. Season with salt and pepper to taste.
  8. Serve hot.

Notes

This soup is great on its own but can be served with crusty bread or a simple side salad. A sprinkle of fresh herbs enhances presentation. Store leftovers in an airtight container in the fridge for up to three days.
