Main Ingredients
  • 2 cups pulled rotisserie chicken Shredded chicken for quick preparation.
  • 1 cup fajita veggies (bell peppers and onions) Can use pre-packaged frozen fajita mix.
  • 1 cup black beans, drained and rinsed Low-sodium beans are recommended.
  • 1 cup corn, drained Canned or frozen corn works.
  • 1 cup green chile cheese sauce Can substitute with pepper jack cheese.
  • 4 large tortillas Use gluten-free tortillas if needed.
  • Salt and pepper to taste Adjust seasoning as preferred.
  • Olive oil for cooking For sautéing the veggies.

Method
 

Preparation
  1. In a skillet, heat olive oil over medium heat.
  2. Add fajita veggies and sauté until softened.
  3. Stir in the pulled chicken, black beans, corn, and green chile cheese sauce. Cook until heated through.
  4. Season with salt and pepper to taste.
  5. Warm tortillas in a separate pan.
  6. Spoon the filling into tortillas, wrap them up, and serve.

Notes

Serve hot with salsa, sour cream, or guacamole. For best texture, keep filling and tortillas separate when meal prepping.
