  • 2 lbs beef stew meat, cubed
  • 4 medium potatoes, diced
  • 3 medium carrots, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Method
 

Cooking Instructions
  1. In your slow cooker, combine the beef stew meat, potatoes, carrots, onion, and garlic.
  2. Pour in the beef broth and diced tomatoes. Sprinkle with thyme, rosemary, salt, and pepper. Drizzle with olive oil.
  3. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
  4. Stir well before serving and adjust seasoning if needed.
