  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1 medium bell pepper, sliced
  • 2 cups brown rice, cooked
For the Sticky Glaze
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated
  • to taste Salt and pepper
Garnish

Method
 

Preparation
  1. In a bowl, mix soy sauce, honey, sesame oil, garlic powder, ginger, salt, and pepper to make the sticky glaze.
Cooking
  1. Heat a skillet over medium-high heat, add chicken pieces, and cook until browned and cooked through, about 5-7 minutes.
  2. Add the glaze to the skillet and cook for an additional 2-3 minutes until it thickens.
  3. In a separate pot, steam the broccoli and bell pepper until tender.
Serving
  1. Serve the cooked chicken over brown rice, topped with steamed veggies, sesame seeds, and green onions.

Notes

For extra flavor, marinate the chicken in the glaze for an hour before cooking. You can also substitute cauliflower rice for brown rice for a low-carb option.
