Ingredients
  

Wet Ingredients
  • 1 cup Greek yogurt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup vegetable oil (optional for richness) Use for a richer texture
Dry Ingredients
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a large bowl, mix the Greek yogurt and sugar together until well combined.
  3. Beat in the eggs, one at a time, and stir in the vanilla extract.
Combining Ingredients
  1. In another bowl, combine the cocoa powder, flour, baking powder, and salt.
  2. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let cool before cutting into squares.

Notes

Serve plain or with a dusting of cocoa or a spoon of yogurt. To store, keep in an airtight container at room temperature for 2 days; in the fridge for up to 5 days; or freeze squares for up to 2 months.
