Ingredients

Main Ingredients
  • 1 lb ground beef Use lean ground beef for less grease.
  • 1 packet taco seasoning Store-bought or homemade blend.
  • 1 cup cooked white rice Use leftover rice or make fresh.
  • 1/2 cup sour cream Can substitute with Greek yogurt.
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce Adjust amount for spice preference.
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella Mix of cheeses can enhance flavor.
  • 4 large flour tortillas Can be substituted with whole wheat or low-carb tortillas.
  • Butter or oil for grilling Use for added flavor and crispness.

Method

Cooking Beef
  1. Brown the ground beef in a skillet over medium heat for 8-10 minutes. Drain excess grease.
  2. Add taco seasoning and 1/4 cup water, then simmer for 5 minutes.
Preparing Tortillas
  1. Heat tortillas on a dry skillet or in the microwave for flexibility.
Assembling Burrito
  1. Lay a tortilla flat and layer with rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream.
  2. Top with shredded cheddar and mozzarella.
Grilling Burrito
  1. Heat a clean skillet and sprinkle 2 tbsp of shredded cheese.
  2. Place the burrito seam-side down and cook until cheese melts and forms a crispy crust.
  3. Flip and repeat on the other side for 3-4 minutes.

Notes

Warm the tortillas to prevent tearing. Drain the beef well to avoid sogginess. For extra crispiness, add a little butter to the skillet before grilling. Can be served with extra sour cream, salsa, or guacamole.
