Ingredients
  

For the crust
  • 1.5 cups 1 1/2 cups chocolate cookie crumbs Use high-quality chocolate cookies for better flavor.
  • 0.5 cups 1/2 cup unsalted butter, melted
For the filling
  • 1 cup 1 cup heavy cream
  • 8 oz 8 oz cream cheese, softened Let sit at room temperature for smoothness.
  • 1 cup 1 cup powdered sugar
  • 0.5 cups 1/2 cup mint chocolate chip ice cream Can replace with regular chocolate ice cream.
  • 1 teaspoon 1 teaspoon peppermint extract Adjust based on preference.
  • Green food coloring (optional)
  • Chocolate shavings or mint leaves for garnish

Method
 

Preparation
  1. In a bowl, combine chocolate cookie crumbs and melted butter, then press the mixture into the bottom of a pie pan to form the crust.
  2. In another bowl, whip the heavy cream until stiff peaks form.
  3. In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth.
  4. Add the mint chocolate chip ice cream, peppermint extract, and a few drops of green food coloring (if using) to the cream cheese mixture, and mix until well combined.
  5. Gently fold the whipped cream into the mint mixture until fully incorporated.
  6. Pour the filling into the prepared crust and smooth the top.
  7. Refrigerate the pie for at least 3 hours to set.

Notes

Grasshopper Pie is best served chilled. You can add whipped cream or chocolate syrup on top. To store any leftover pie, keep it covered in the refrigerator for up to 3 days.
