Ingredients
  

For the Crust
  • 1 piece Schar Gluten Free Pizza Crust
  • 3 tbsp Butter (melted)
  • 2 tbsp Sugar
  • 1 tsp Cinnamon
For the Raspberry Jam
  • 2 cups Raspberries Use fresh raspberries for best flavor.
  • 2 tbsp Sugar
  • 2 tsp Cornstarch
  • 1/2 piece Lemon (juiced)
  • 2 tbsp Water
For the Crumble
  • 1/2 cup Gluten-Free Flour Blend
  • 2 tbsp Granulated Sugar
  • 2 tbsp Brown Sugar
  • 4 tbsp Butter (Very Softened, but not melted)
For the Frosting
  • 1 cup Confectioners Sugar
  • 1 tbsp Milk Use dairy-free milk for a dairy-free option.

Method
 

Preparation
  1. Mix the melted butter, sugar and cinnamon together to sweeten up the crust. Brush the mixture evenly across the crust to the edges.
  2. Simmer all the ingredients for the berry jam in a small stove top pan, until the mixture turns into a jam consistency, then strain in a sieve to remove seeds if desired.
  3. Spread the jam onto the pizza crust as you would pizza sauce.
Crumble Preparation
  1. Combine the crumble ingredients in a separate bowl. Using the back of a fork, press mixture together until it resembles a crumble consistency.
Baking
  1. Place the pizza on a baking tray, and bake at 400° for about 8 minutes, or until the crust and crumble are golden.
  2. Let the pizza cool for about 10 minutes.
Frosting
  1. Combine the frosting ingredients and drizzle across the pizza in each direction.
  2. Slice and serve.

Notes

Store any leftovers in an airtight container in the fridge. You can reheat in the oven at a low temperature or enjoy cold. Be careful not to overcook the jam; it should be thick but pourable.
