  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dairy-free chocolate chips

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine peanut butter, brown sugar, honey/maple syrup, vanilla extract, baking soda, and salt until smooth.
  3. Fold in the chocolate chips.
  4. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until golden around the edges.
  2. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store the cookies in an airtight container at room temperature for up to a week. If you want to enjoy them later, you can freeze them. Just thaw them for a few minutes before eating. Try adding nuts or seeds for extra crunch!
