Ingredients
  

For the cinnamon roll
  • 1/4 cup gluten free pancake mix You can use a vegan pancake mix.
  • 1/4 tsp baking powder
  • 2 tbsp almond milk Plus more, if needed.
  • 1 tbsp maple syrup
  • 1 tsp coconut oil
  • 1 pinch sea salt
  • 2 tsp coconut sugar
  • 1/4 tsp cinnamon
For the glaze
  • 2 tbsp powdered sugar
  • 1 tsp almond milk

Method
 

Preparation
  1. In a greased shallow mug or ramekin, combine all ingredients for the cinnamon roll and whisk together with a fork.
  2. If the batter is too thick, splash in some more almond milk until it resembles a thick pancake batter.
  3. In a separate bowl, make cinnamon sugar by mixing coconut sugar and cinnamon together.
  4. Sprinkle the cinnamon sugar evenly over the prepared batter.
  5. Using a knife or a chopstick, swirl the cinnamon sugar into the batter in a circular motion until evenly incorporated.
  6. Microwave for 1 minute to 1 minute 20 seconds, depending on the power of your microwave.
  7. Combine ingredients for the sugar glaze until smooth and drizzle over the cinnamon roll.

Notes

This cinnamon roll is best served warm and fresh. You can top it with a drizzle of your favorite nut butter or a dollop of whipped coconut cream for added richness. If you have leftovers, you can store them in the refrigerator for a day. To reheat, simply microwave for a few seconds until warmed through.
