Preparation
- In a greased shallow mug or ramekin, combine all ingredients for the cinnamon roll and whisk together with a fork.
- If the batter is too thick, splash in some more almond milk until it resembles a thick pancake batter.
- In a separate bowl, make cinnamon sugar by mixing coconut sugar and cinnamon together.
- Sprinkle the cinnamon sugar evenly over the prepared batter.
- Using a knife or a chopstick, swirl the cinnamon sugar into the batter in a circular motion until evenly incorporated.
- Microwave for 1 minute to 1 minute 20 seconds, depending on the power of your microwave.
- Combine ingredients for the sugar glaze until smooth and drizzle over the cinnamon roll.
Notes
This cinnamon roll is best served warm and fresh. You can top it with a drizzle of your favorite nut butter or a dollop of whipped coconut cream for added richness. If you have leftovers, you can store them in the refrigerator for a day. To reheat, simply microwave for a few seconds until warmed through.
