  • 2 cups apples, peeled and diced Use a mix of sweet and tart apples for flavor.
  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • to taste powdered sugar for dusting Optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a large bowl, whisk the eggs and sugar together until light and fluffy.
  3. Stir in the melted butter and vanilla extract.
  4. In another bowl, mix the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  5. Fold in the diced apples gently.
  6. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
Serving
  1. Dust with powdered sugar before serving if desired.
  2. This cake can be served warm or at room temperature.
  3. Top with whipped cream or serve alongside vanilla ice cream.

Notes

Store leftover cake in an airtight container at room temperature for up to three days. Refrigerate for longer storage.
