Ingredients
  

Zucchini Preparation
  • 675 grams zucchinis (3 medium)
Filling Ingredients
  • 150 grams crumbled feta cheese
  • 90 grams Greek yogurt strained
  • 20 grams Spring onion (1 medium)
  • 40 grams grated Gruyere cheese (½ cup)
  • ½ lemon lemon zest
  • ½ teaspoon garlic powder
  • 1 tablespoon finely chopped parsley
  • 1 tablespoon olive oil (+ a little bit extra to drizzle on top)
  • teaspoon dried oregano (+ a little bit extra to sprinkle on top)

Method
 

Preparation
  1. Preheat oven to 200°C / 390°F.
  2. Cut the zucchinis in half lengthwise. Scoop out the center to make space for the filling.
Make the Filling
  1. In a bowl, mix feta cheese, Greek yogurt, chopped spring onion, grated Gruyere cheese, lemon zest, garlic powder, parsley, and oregano.
Stuff and Bake
  1. Fill each zucchini half with the cheese mixture.
  2. Place the stuffed zucchinis on a baking tray. Drizzle with olive oil and sprinkle with extra oregano.
  3. Bake for about 25-30 minutes.

Notes

Serve the stuffed zucchinis warm. They are great on their own or with a side salad, rice, or bread. Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, use the oven or microwave until warm. Press down the filling well to pack more into the zucchini, and use fresh herbs for better flavor. Consider adding other veggies or spices to the filling.
