  • 2 cups fresh blueberries Use fresh for best flavor.
  • 1 tablespoon lemon zest
  • 1/2 cup sugar Adjust based on the sweetness of the blueberries.
For the Batter
  • 1 cup all-purpose flour Can substitute with almond flour for gluten-free.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine fresh blueberries, lemon zest, and sugar; set aside.
  3. In another bowl, mix flour, baking powder, salt, milk, melted butter, and vanilla to create a batter.
Baking
  1. Pour the batter into a greased baking dish.
  2. Spoon the blueberry mixture on top.
  3. Bake for 30-35 minutes until golden brown.
Serving
  1. Serve warm, topped with a scoop of vanilla ice cream or a drizzle of whipped cream.
