  • 4 pieces boneless, skinless chicken breasts Use thin or even-sized breasts for even cooking.
  • 1 packet ranch dressing mix
  • 8 oz cream cheese Cut into chunks for faster melting.
  • 1 cup shredded cheddar cheese Can swap for pepper jack for a spicy kick.
  • 6 slices cooked bacon, crumbled Reserve some for topping when serving.
  • to taste chopped green onions For garnish.

Method
 

Preparation
  1. Place chicken breasts in the crock pot.
  2. Sprinkle ranch dressing mix over the chicken.
  3. Cut cream cheese into chunks and add it on top.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  5. Shred the chicken with two forks and stir in the cheddar cheese and crumbled bacon.
  6. Serve warm over rice or in a lettuce wrap, garnished with chopped green onions.

Notes

For longer storage, freeze in a freezer-safe container for up to 3 months. Thaw in the fridge before reheating. This dish can also be made in an Instant Pot.
