  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
Wet Ingredients
  • 1/2 cup milk
  • 1/2 cup apple cider
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
Main Ingredients
  • 2 cups apples, peeled and diced Use firm apples like Granny Smith or Honeycrisp
For the Topping
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons apple cider

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, mix milk, apple cider, eggs, and melted butter.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the diced apples gently to maintain a light texture.
Baking
  1. Pour half of the batter into the prepared pan.
  2. Sprinkle brown sugar and vanilla extract on top.
  3. Add the remaining batter on top.
  4. Bake for 50-60 minutes or until a toothpick comes out clean.
Glazing
  1. Whisk together powdered sugar and apple cider until smooth.
  2. Drizzle over the bread once it has cooled.

Notes

Wrap the loaf tightly in plastic wrap or store it in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for up to 5 days or freeze slices for up to 2 months.
