Ingredients
  

For the Beignets
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter, melted
  • Vegetable oil for frying Use a neutral oil with high smoke point.
  • Powdered sugar for dusting Dust right before serving.

Method
 

Preparation
  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, mix milk, eggs, vanilla extract, and melted butter.
  3. Combine wet and dry ingredients until just mixed; do not overmix.
  4. Heat oil in a deep frying pan to 350°F (175°C).
Frying
  1. Drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  2. Remove beignets and drain on paper towels.
  3. Dust with powdered sugar before serving and enjoy your warm, homemade beignets!

Notes

Keep oil at 350°F (175°C) for best results. Fry in small batches to maintain oil temperature. Dust with powdered sugar just before serving for best look and taste.
