Ingredients
  

Creamy Ranch Chicken & Potatoes
  • 4 pieces boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 1 oz ranch seasoning mix
  • 10.5 oz cream of chicken soup
  • ½ cup chicken broth
  • ½ cup sour cream
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 tbsp olive oil for greasing
  • to taste none fresh parsley for garnish
Hearty Beef & Bean Chili
  • 1.5 lbs ground beef
  • 1 piece onion, diced
  • 2 cans kidney beans, drained (15 oz each)
  • 1 can black beans, drained (15 oz)
  • 1 can diced tomatoes (15 oz)
  • 1 can tomato paste (6 oz)
  • 1 packet chili seasoning 1.27 oz
  • 2 cups beef broth
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • to taste none shredded cheese & sour cream for serving
Honey Garlic Chicken & Veggies
  • 4 pieces boneless, skinless chicken thighs
  • 3 cups mixed veggies (carrots, broccoli, bell peppers)
  • cup honey
  • ¼ cup soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp ginger, grated
  • 1 tbsp cornstarch optional, for thickening

Method
 

Creamy Ranch Chicken & Potatoes
  1. Lightly grease your crock pot with olive oil. Place the halved baby potatoes at the bottom.
  2. Lay the chicken breasts on top of the potatoes.
  3. In a bowl, whisk together the ranch seasoning, cream of chicken soup, chicken broth, sour cream, garlic powder, and black pepper. Pour this mixture over the chicken and potatoes.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender and the potatoes are soft.
  5. Garnish with fresh parsley and enjoy!
Hearty Beef & Bean Chili
  1. In a skillet, cook the ground beef and onion until browned. Drain excess fat.
  2. Transfer the beef mixture to the crock pot. Add beans, diced tomatoes, tomato paste, chili seasoning, beef broth, cumin, and paprika. Stir well.
  3. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  4. Top with shredded cheese and sour cream before serving.
Honey Garlic Chicken & Veggies
  1. Whisk honey, soy sauce, garlic, vinegar, and ginger in a bowl.
  2. Place chicken and veggies in the crock pot. Pour sauce over them.
  3. Cook on LOW for 4-5 hours or HIGH for 2-3 hours.
  4. Optionally, mix cornstarch with water, stir into the pot, and cook for an additional 10 minutes to thicken.
