  • 2 large cucumbers, diced
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup red onion, finely chopped (optional) Can be omitted if desired.
  • 1/4 cup fresh mint leaves, chopped Use fresh for best flavor.
  • 1/4 cup feta cheese, crumbled (optional) Use goat cheese as an alternative.
Dressing Ingredients
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar Adjust to taste.
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the diced cucumbers, sliced strawberries, and optional red onion.
  2. Add the chopped mint leaves and crumbled feta cheese, if using.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld.

Notes

Choose ripe strawberries for the best flavor. Store leftovers in an airtight container and consume within a day or two to avoid watery cucumbers. Make it vegan by omitting feta cheese.
