  • 2 cups fresh strawberries, hulled and sliced Choose ripe strawberries for the best flavor.
  • 1/4 cup red onion, finely chopped (optional) Can be omitted for a milder flavor.
  • 1/4 cup fresh mint leaves, chopped Use fresh mint for a burst of aroma and taste.
  • 1/4 cup feta cheese, crumbled (optional) Can be substituted with goat cheese or omitted for a vegan option.
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar Adjust to taste.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the diced cucumbers, sliced strawberries, and optional red onion.
  2. Add the chopped mint leaves and crumbled feta cheese, if using.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld.

Notes

Store any leftovers in an airtight container in the fridge. Best to consume within a day or two. Can be served as a standalone dish or as a side with grilled meats.
