  • 2 pounds boneless, skinless chicken breasts (or thighs) Chicken thighs can be used for richer flavor.
  • 1 oz ranch seasoning mix Use your favorite brand.
  • 8 oz cream cheese, softened and cubed Can be substituted with Greek yogurt for a lighter option.
Optional Additions
  • 1/4 cup chicken broth For extra moisture.
  • 4 strips bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese Add for extra creaminess.

Method
 

Preparation
  1. Lightly spray your crockpot with non-stick cooking spray.
  2. Place chicken breasts in a single layer at the bottom of the slow cooker.
  3. Sprinkle the ranch seasoning evenly over the chicken.
  4. Cut cream cheese into small cubes and scatter over the chicken.
Cooking
  1. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  2. Once cooked, shred the chicken with two forks directly in the slow cooker.
  3. Stir everything together until the creamy sauce coats all the chicken.
  4. Let the mixture rest for 5 minutes before serving.

Notes

Serve over rice, in tacos, or on sandwiches. Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat with a splash of chicken broth to restore creaminess.
