  • 3 lbs beef chuck roast Use a good quality beef chuck roast for better flavor.
  • 4 medium carrots, peeled and cut into chunks
  • 4 medium potatoes, cut into chunks
  • 1 onion, chopped
  • 2 cups beef broth Ensure it's gluten-free if needed.
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme Feel free to use different herbs.
  • 1 teaspoon dried rosemary Feel free to use different herbs.

Method
 

Preparation and Cooking
  1. Season the beef chuck roast with salt and pepper. In a skillet over medium-high heat, sear the roast on all sides until browned.
  2. In a slow cooker, place the carrots, potatoes, and onion at the bottom.
  3. Add the seared roast on top of the vegetables.
  4. In a bowl, combine beef broth, Worcestershire sauce, garlic, thyme, and rosemary; pour over the roast.
  5. Cover and cook on low for 8 hours or on high for 4-5 hours, until the meat is tender.
  6. Serve warm with the vegetables and gravy.

Notes

To store leftovers, place them in an airtight container. Keep them in the refrigerator for up to 3 days. You can also freeze it for longer storage. To reheat, simply microwave or warm on the stove. For extra flavor, let the roast marinate in the seasonings for a few hours before cooking.
