Preparation and Cooking
- Season the beef chuck roast with salt and pepper. In a skillet over medium-high heat, sear the roast on all sides until browned.
- In a slow cooker, place the carrots, potatoes, and onion at the bottom.
- Add the seared roast on top of the vegetables.
- In a bowl, combine beef broth, Worcestershire sauce, garlic, thyme, and rosemary; pour over the roast.
- Cover and cook on low for 8 hours or on high for 4-5 hours, until the meat is tender.
- Serve warm with the vegetables and gravy.
Notes
To store leftovers, place them in an airtight container. Keep them in the refrigerator for up to 3 days. You can also freeze it for longer storage. To reheat, simply microwave or warm on the stove. For extra flavor, let the roast marinate in the seasonings for a few hours before cooking.
