Ingredients
  

Main Ingredients
  • 2 pounds boneless, skinless chicken breasts Fresh or frozen can be used.
  • 1 medium bell pepper, sliced Any color bell pepper works.
  • 1 medium onion, sliced
  • 1 packet fajita seasoning Store-bought or homemade seasoning.

  • tortillas For serving.
  • avocado For serving.
  • salsa For serving.
  • cheese For serving.

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker.
  2. Add sliced bell pepper and onion on top of the chicken.
  3. Sprinkle the fajita seasoning over the ingredients.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  2. Once done, shred the chicken in the cooker and mix with the vegetables.
Serving
  1. Serve in warm tortillas or on a plate with optional toppings.

Notes

Use pre-sliced vegetables for even less prep time. Add black beans for extra protein and fiber. For a smoky flavor, try adding chipotle powder. If you love cheesy fajitas, sprinkle some cheese before serving. Store leftovers in an airtight container in the fridge for 3-4 days.
