Preparation
- Place the chicken breasts in the slow cooker.
- Add sliced bell pepper and onion on top of the chicken.
- Sprinkle the fajita seasoning over the ingredients.
Cooking
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once done, shred the chicken in the cooker and mix with the vegetables.
Serving
- Serve in warm tortillas or on a plate with optional toppings.
Notes
Use pre-sliced vegetables for even less prep time. Add black beans for extra protein and fiber. For a smoky flavor, try adding chipotle powder. If you love cheesy fajitas, sprinkle some cheese before serving. Store leftovers in an airtight container in the fridge for 3-4 days.
