  • 2 lbs boneless skinless chicken breasts You can replace with chicken thighs for a juicier result.
  • 2 tbsp Cajun seasoning blend For extra flavor, marinate the chicken in this seasoning overnight.
  • 1/2 cup unsalted butter, cubed
  • 1/2 cup chicken broth You can also use vegetable broth for a vegetarian option.
  • 1/2 cup heavy cream
  • 1 tbsp cornstarch Mixed with 1 tbsp of cold water to thicken the sauce.
  • 1 cup long grain white rice, uncooked This absorbs the sauce beautifully.
  • 2 tbsp fresh green parsley, finely chopped Used for garnish.
  • 1 tsp coarse black pepper
  • 1/2 tsp red paprika flakes Add more for extra spice if desired.

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. Sprinkle the Cajun seasoning over the chicken and add the cubed butter.
  3. Pour in the chicken broth and heavy cream, then cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. About 30 minutes before serving, mix cornstarch with cold water and add to the crockpot.
  5. Add the uncooked rice and stir everything together.
  6. Cover and let it cook until the rice is tender, around 20-25 minutes.
  7. Before serving, sprinkle with fresh parsley and season with black pepper and paprika flakes.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stovetop, adding broth if the sauce thickens. Consider adding diced bell peppers or onions for more texture and flavor.
