  • 1 cup pineapple chunks
  • 1 piece onion, sliced
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Method
 

Preparation
  1. In a bowl, mix soy sauce, brown sugar, garlic, and ginger to create the glaze.
  2. Place the pork loin in the crock pot and season with salt and pepper.
  3. Add pineapple chunks and sliced onion over the pork.
  4. Pour the glaze over everything.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  2. For sliceable pork, check doneness at 145°F. For shredded pork, cook longer until tender, then shred with forks.
Serving
  1. Serve over a bed of rice or with steamed vegetables.
  2. Drizzle some of the leftover sauce from the crock pot over the dish.
Storage
  1. Store leftovers in an airtight container in the fridge for up to 3 days.
  2. Reheat using a microwave or warm the pork in the crock pot until heated through.

For extra flavor, sear the pork loin before placing it in the crock pot. You can add more vegetables like carrots or bell peppers for added nutrition. Adjust sweetness or saltiness by modifying the brown sugar or soy sauce.
