Main Ingredients
  • 1 lb chicken breast, diced Diced for even cooking
  • 1 lb smoked sausage, sliced Can use pre-cooked sausage for a quicker meal
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 cup long-grain rice Can substitute with quinoa for a healthier option
  • 2 tsp Cajun seasoning Adjust for a spicier dish
  • to taste Salt and pepper
  • as needed Green onions for garnish Optional

Method
 

Preparation
  1. In a crock pot, combine diced chicken, sliced sausage, chopped onion, bell pepper, celery, minced garlic, diced tomatoes, chicken broth, rice, Cajun seasoning, salt, and pepper.
  2. Stir to mix all ingredients well.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the rice is cooked and the chicken is tender.
  2. Once done, stir well and let sit for a few minutes before serving.

Notes

Serve hot with a simple green salad or warm bread. Store leftovers in an airtight container in the fridge for 3-4 days. Can freeze for up to 3 months.
