Ingredients

  • 3-4 lbs chuck roast
  • 1 whole onion, sliced
  • 4 medium carrots, chopped
  • 4 medium potatoes, cubed
  • 2 cups beef broth
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • Optional: herbs like thyme or rosemary

Method
 

Preparation
  1. Place the sliced onion, carrots, and potatoes in the bottom of the crock pot.
  2. Season the chuck roast with salt and pepper on all sides and place it on top of the vegetables.
  3. In a separate bowl, mix together the beef broth, minced garlic, Worcestershire sauce, and herbs (if using). Pour this mixture over the roast.
Cooking
  1. Cover and cook on low for 8 hours or until the meat is tender and easily shreds with a fork.
Serving
  1. Serve hot with the cooked vegetables and gravy from the pot.
  2. Alternatively, shred the meat and use it in sandwiches or tacos.

Notes

You can store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, microwave or reheat on the stove, adding a little beef broth to keep it moist. For extra flavor, brown the roast before cooking and add a splash of red wine.
