Preparation
- Place the sliced onion, carrots, and potatoes in the bottom of the crock pot.
- Season the chuck roast with salt and pepper on all sides and place it on top of the vegetables.
- In a separate bowl, mix together the beef broth, minced garlic, Worcestershire sauce, and herbs (if using). Pour this mixture over the roast.
Cooking
- Cover and cook on low for 8 hours or until the meat is tender and easily shreds with a fork.
Serving
- Serve hot with the cooked vegetables and gravy from the pot.
- Alternatively, shred the meat and use it in sandwiches or tacos.
Notes
You can store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, microwave or reheat on the stove, adding a little beef broth to keep it moist. For extra flavor, brown the roast before cooking and add a splash of red wine.
