Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the mashed sweet potato, cooked red lentils, breadcrumbs, chopped onion, minced garlic, cumin, paprika, salt, and pepper. Mix until well combined.
- Form the mixture into small patties and place them on a baking sheet lined with parchment paper.
- Brush the patties lightly with olive oil.
Cooking
- Bake for 25-30 minutes, flipping halfway through, until they are golden and crispy.
- Serve warm with your favorite dipping sauce.
Notes
Cool patties fully before storing. Keep in an airtight container in the fridge for up to 4 days. Freeze cooked patties on a tray, then move to a bag; freeze up to 2 months. Reheat in the oven or air fryer for best crispness.
