  • 6 pieces bone-in, skin-on chicken thighs Ensure they are thoroughly dried before cooking.
  • 1 cup freshly grated Parmesan cheese Use freshly grated for better melting.
  • 2 tablespoons Italian seasoning blend Can be replaced with fresh herbs.

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Pat the chicken thighs completely dry using paper towels.
  3. Mix the Parmesan cheese and Italian seasoning in a shallow bowl.
  4. Press each chicken thigh into the Parmesan mixture, coating both sides.
  5. Arrange the chicken thighs skin-side up on the prepared baking sheet.
Cooking
  1. Bake for 35-40 minutes until the internal temperature reaches 165°F (74°C) and the coating is golden brown.
  2. Rest for 5 minutes before serving.

Notes

Serve alongside roasted vegetables or a fresh salad. Store leftovers in an airtight container for up to 4 days.
