Ingredients
  

For the truffles
  • 1 cup cream cheese, softened Make sure it’s softened for easier mixing.
  • 1/2 cup powdered sugar
  • 1/4 cup lemon juice Feel free to adjust for stronger flavor.
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 1/2 cups white chocolate chips Melted and slightly cooled.
  • 1 cup graham cracker crumbs For rolling the truffles.
  • Extra to taste powdered sugar for dusting

Method
 

Preparation
  1. In a mixing bowl, combine softened cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract.
  2. Melt the white chocolate chips in a microwave or on a double boiler. Allow it to cool slightly.
  3. Add the melted chocolate to the cream cheese mixture and mix until well combined.
  4. Chill the mixture in the refrigerator for 30 minutes.
  5. Once chilled, scoop out small portions and roll into balls.
  6. Roll each truffle in graham cracker crumbs and dust with powdered sugar.
  7. Refrigerate until firm and serve.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to three months.
