  • 1 package (about 9 ounces) cheese-filled tortellini or fresh tortellini for better texture
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend) or mozzarella for a milder flavor
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking
  • Chopped fresh cilantro (optional for garnish)

Preparation
  1. In a large skillet, heat a little olive oil over medium heat.
  2. Add diced onion and minced garlic, cooking until the onion is translucent.
  3. Add the ground beef and cook until browned, breaking it up with a spoon. Season with salt and pepper.
  4. Stir in the enchilada sauce and bring to a simmer.
  5. Add the cheese-filled tortellini to the skillet and stir to combine, ensuring the tortellini are covered in sauce.
  6. Cover and cook for about 7-10 minutes, until the tortellini are cooked through.
  7. Sprinkle the shredded cheese on top, cover again, and let it melt for a few minutes.
  8. Serve hot, garnished with chopped cilantro if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stove with a splash of water if needed. Customize with toppings like garlic bread or extra cheese.
