Ingredients

  • 1 can black beans Drained and rinsed
  • 4 oz cream cheese Softened
  • 1 tsp cumin Spice for flavor
  • 1 tsp garlic powder Spice for flavor
Taquito Assembly
  • 8 pieces tortillas Use gluten-free tortillas for a gluten-free option
  • 1 cup cheddar cheese Shredded, can substitute with other cheeses
  • oil for frying For frying taquitos

Method
 

Preparation
  1. In a mixing bowl, combine black beans and cream cheese until well mixed.
  2. Add spices and mix again.
  3. Take a tortilla and place a spoonful of the black bean mixture in the center.
  4. Sprinkle cheddar cheese on top.
  5. Roll the tortilla tightly and seal the edges.
Cooking
  1. Heat oil in a pan over medium heat.
  2. Fry the taquitos until golden brown and crispy, about 2-3 minutes on each side.

Notes

Serve with salsa, guacamole, or hot sauce for added flavor. Store leftover taquitos in an airtight container in the fridge for up to 3 days. To reheat, use an oven or air fryer to keep them crispy.
