Preparation
- Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
- Bring a large pot of salted water to a boil. Cook the elbow macaroni until just al dente. Drain and set aside.
Cheese Sauce
- In a large saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1-2 minutes until lightly golden.
- Slowly pour in the milk and cream while whisking. Continue cooking until thickened, about 4-6 minutes.
- Stir in garlic powder, mustard powder, paprika, salt, and pepper.
- Reduce heat to low and mix in the shredded cheddar, mozzarella, and Parmesan until melted and smooth.
Combine and Bake
- Add the cooked macaroni to the cheese sauce and stir to coat.
- Pour the mixture into the greased baking dish and spread evenly.
- If using, mix panko with melted butter and smoked paprika and sprinkle over the top.
- Bake uncovered for 20-25 minutes, or until bubbly and lightly golden. Broil for 2-3 minutes for a crispier topping, if desired.
Cool and Serve
- Let rest for 5-10 minutes before serving for best texture.
Notes
Use freshly shredded cheese for a smoother sauce. Add cooked bacon or vegetables for extra flavor. For heat, add cayenne pepper. Store leftovers in an airtight container for up to 3 days.
