Preparation
- If using fresh spinach, wash and roughly chop it. If using frozen, ensure it’s fully thawed and drained.
Cooking
- In a large skillet, heat the spinach over medium heat until wilted (about 3-5 minutes for fresh, 2 minutes for frozen).
- For Classic version, melt butter in a skillet, add garlic, and cook until fragrant (about 1 minute).
- Add spinach to the skillet and cook until wilted.
- Pour in the heavy cream, stir in Parmesan, and nutmeg (for Classic).
- Simmer for 3-4 minutes until thickened. Season with salt and pepper to taste.
- Serve hot, cooking for another 2-3 minutes until creamy and slightly thickened.
Notes
For a lighter version, swap heavy cream for half-and-half or whole milk. Add-ins like sautéed garlic or crumbled bacon can enhance the flavor.
