  • 4 pieces chicken thighs Skin-on, preferably bone-in for better flavor.
  • 1 cup cranberries Fresh or frozen cranberries can be used.
  • 2 tablespoons fresh rosemary, chopped Fresh rosemary gives the best flavor.
  • 1 cup white wine Choose a good quality white wine.
  • to taste tsp Salt and pepper Season according to preference.
  • 2 tablespoons Olive oil For searing the chicken.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Season chicken thighs with salt and pepper, then add them to the skillet, skin side down.
  4. Sear until golden brown, about 5-7 minutes.
Cooking
  1. Flip the chicken, add cranberries and rosemary around the thighs.
  2. Pour white wine into the skillet.
  3. Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through.
  4. Serve hot and enjoy your meal!

Notes

For a perfect meal, serve with rice or mashed potatoes, or over fresh greens with a splash of lemon juice. Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven at 350°F (175°C).
