Preparation
- Add medjool dates, almonds, walnuts, shredded coconut, cocoa powder, vanilla extract, and salt to a food processor.
- Blend the ingredients until a sticky dough forms. If the dough is crumbly, add 1-2 tbsp maple syrup and blend again.
- Transfer the brownie dough to a bowl and fold in the candy coated chocolate chips.
- Using clean hands, scoop and roll the dough into bite-sized balls.
Notes
These bites can be served plain or drizzled with melted chocolate. They pair well with almond milk or coffee, and can be stored in an airtight container in the refrigerator for up to a week. Freeze for longer storage.
