Notes

For extra flavor, let the curry simmer a bit longer. You can add vegetables like bell peppers or spinach for a healthier twist. Adjust the spice level by using more or less curry paste. Fresh cilantro adds a nice touch right before serving. Store leftovers in an airtight container for up to 3 days.
