Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup fresh blueberries Use fresh, firm blueberries to avoid too much juice.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the oats, flour, baking soda, and salt.
  3. In another bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the wet ingredients, mixing well.
  5. Gradually add the dry ingredients to the wet mixture and stir until combined.
  6. Gently fold in the blueberries.
Baking
  1. Drop spoonfuls of dough onto a prepared baking sheet.
  2. Bake for 10-12 minutes or until edges are golden.
  3. Allow to cool before serving.

Notes

Serve warm or at room temperature. They pair well with a glass of milk, tea, or coffee. Store in an airtight container at room temperature for up to 3 days, or freeze in a single layer for up to 2 months. Tips include using fresh blueberries and not overmixing the dough.
