Ingredients

Main Ingredients
  • ½ cup unsalted butter 1 stick
  • 1 cup heavy cream
  • cups freshly grated Parmesan cheese Avoid pre-shredded for best results
  • to taste none Salt and black pepper Optional

Method

Preparation
  1. Melt the Butter: In a medium saucepan, melt the butter over medium-low heat. Be careful not to let it brown—just melt it gently.
  2. Add the Cream: Pour in the heavy cream, stirring constantly with a whisk. Let it simmer for 2–3 minutes until it thickens slightly.
  3. Incorporate the Cheese: Reduce the heat to low and gradually sprinkle in the Parmesan cheese, whisking continuously until the sauce is smooth and creamy. If the sauce is too thick, add a splash of warm milk or pasta water.
  4. Season: Taste and adjust with salt and black pepper if needed. Remember, Parmesan is salty, so go easy on extra salt!
  5. Serve Immediately: This 3-ingredient alfredo sauce is best served fresh over hot pasta, but it can also be used in casseroles or as a dip.

Notes

For an even quicker version, use a handheld immersion blender for an extra-silky texture. Store leftovers in an airtight container for up to 3 days.
