  • 2 cups mixed vegetables (bell peppers, carrots, broccoli) Use any combination of your favorite vegetables.
  • 3 pieces green onions, chopped For garnish.
  • 4 cloves garlic, minced Provides rich flavor.
Sauces and Seasoning
  • 2 tablespoons soy sauce Adjust to taste.
  • 1 tablespoon oyster sauce (optional) Leave out for a vegan option.
  • 1 teaspoon sesame oil Adds depth of flavor.

Preparation
  1. Cook the chow mein noodles according to package instructions, then drain and set aside.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the minced garlic and sauté for 30 seconds until fragrant.
  3. Add the mixed vegetables and stir-fry for about 3-5 minutes, or until they are tender-crisp.
  4. Stir in the cooked noodles.
  5. Add soy sauce, oyster sauce, sesame oil, salt, and pepper.
  6. Toss everything together until well combined and heated through.
  7. Garnish with chopped green onions and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave or on the stove until hot. Use fresh vegetables for best flavor and adjust sauces to your taste.
