Ingredients
  

Pumpkin Mixture
  • 1 cup pumpkin puree
  • 1/2 cup nut butter (sunflower seed butter for nut-free) Can substitute with other nut butters.
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup or honey Adjust amount for sweetness.
  • 1 tsp vanilla extract
  • 1 pinch salt
Topping
  • 1 cup dairy-free chocolate chips Can use regular chocolate chips for non-vegan version.

Method
 

Preparation
  1. In a mixing bowl, combine pumpkin puree, nut butter, cocoa powder, maple syrup, vanilla extract, and salt. Mix until smooth.
  2. Line a mini muffin tin with cupcake liners.
  3. Spoon a small amount of the mixture into each liner.
  4. Melt the dairy-free chocolate chips and spoon over the pumpkin mixture, spreading it evenly.
  5. Freeze for about 30 minutes or until solid.
  6. Remove from muffin tin and enjoy!

Notes

Store in an airtight container in the freezer for up to a month or in the fridge for a week. Serve with whipped coconut cream or sprinkle with sea salt.
