Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips
For the Cheesecake Filling
  • 8 oz cream cheese, softened Make sure it is softened for smooth mixing.
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until smooth.
  3. Beat in eggs, one at a time, then stir in vanilla.
  4. In a separate bowl, combine flour, baking soda, and salt; gradually add to the creamed mixture. Stir in chocolate chips.
  5. In another bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  6. Take a tablespoon of cookie dough, flatten it, and place a teaspoon of the cheesecake mixture in the center. Wrap the dough around the cheesecake filling, forming a ball.
Baking
  1. Place the balls on prepared baking sheets and bake for 10-12 minutes, until edges are golden.
  2. Allow to cool for a few minutes on the sheet before transferring to a wire rack.

Notes

These cookies are best enjoyed warm, but they are also delicious at room temperature. Store in an airtight container at room temperature for up to a week, or freeze for up to two months.
