  • 2 cups cooked chicken, shredded Shredded rotisserie chicken is recommended.
  • 1 can cream of chicken soup 10.5 oz can.
  • 1 cup frozen mixed vegetables You can use any mix of your choice.
  • 1 cup milk Any milk type can be used.
  • 1 cup biscuit mix
  • 1/2 cup shredded cheddar cheese Or use Monterey Jack for a different flavor.
  • 1/2 teaspoon garlic powder
  • Salt and pepper To taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, mixed vegetables, and milk. Stir until well mixed.
  3. Pour the chicken mixture into a greased baking dish.
  4. In another bowl, mix the biscuit mix with the garlic powder, salt, and pepper.
  5. Pour the biscuit mixture over the chicken mixture and spread it evenly.
  6. Sprinkle the shredded cheddar cheese on top.
  7. Bake in the preheated oven for 25-30 minutes or until the biscuit topping is golden brown.
  8. Let cool for a few minutes before serving.

Notes

Best served warm. Can be paired with a fresh salad or crusty bread. Store leftovers in an airtight container in the fridge for up to three days. You can make ahead of time and bake when needed.
