- Heat olive oil in a skillet over medium heat. Add the ground beef, breaking it apart with a spatula. Season with salt and pepper, and cook until browned (about 5–7 minutes). Drain excess fat if needed.
- Place a tortilla in a clean skillet over medium heat. Sprinkle ½ cup of cheese evenly over the tortilla, then add a layer of cooked ground beef. Top with another ½ cup of cheese and a second tortilla.
- Press down lightly with a spatula and cook for 2–3 minutes per side, or until the cheese is melted and the tortilla is golden brown.
- Slice into wedges and serve with salsa, sour cream, or guacamole.
Notes
Consider adding spices or swapping cheese types for varied flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
