Ingredients
  

For the Casserole
  • 4 cups broccoli florets Fresh or frozen, steamed until tender
  • 2 cups cheddar cheese, shredded Use fresh cheese for best flavor
  • 1 can cream of mushroom soup Can be replaced with cream of chicken or other types
  • 1 cup cooked rice Use leftover or pre-cooked rice
  • 1 cup bread crumbs For topping, can add seasoning for extra flavor
  • 2 tablespoons butter, melted For mixing with bread crumbs

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, steam the broccoli until tender.
  3. In a bowl, mix the cooked broccoli with cheddar cheese, cream of mushroom soup, and cooked rice.
  4. Pour the mixture into a greased baking dish.
Topping
  1. In a separate bowl, combine bread crumbs and melted butter; sprinkle over the casserole.
Baking
  1. Bake for 30 minutes or until golden brown.

Notes

Make sure not to overcook the broccoli; it should be tender but still bright green. For a crunchier top, bake a few minutes longer. You can store leftovers in an airtight container in the fridge or freeze them for later use.
