Ingredients

Lasagna
  • 12 ounces lasagna noodles Use traditional or no-boil noodles
  • 3 ½ cups rotisserie chicken, shredded For ease, use pre-cooked rotisserie chicken
Cheese Mixture
  • 1 packet ranch seasoning Choose your favorite brand
  • 24 ounces cream cheese, softened Make sure it's softened for easy mixing
  • 1 cup buffalo sauce Adjust according to your heat preference
  • ½ cup milk Use whole milk for richness
  • 2 cups cheddar cheese, shredded Feel free to use sharp cheddar for more flavor
  • 2 cups mozzarella cheese, shredded Reserve ½ cup for topping
Optional Toppings
  • ranch dressing For drizzling
  • green onions, chopped For garnish
  • blue cheese crumbles For added flavor

Method

Preparation
  1. In a large mixing bowl, combine softened cream cheese, ranch seasoning, buffalo sauce, milk, cheddar cheese, and 1 ½ cups of the mozzarella cheese. Mix until smooth and well incorporated.
  2. Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay flat on a clean surface to prevent sticking.
Assembly
  1. Spread a thin layer of the cheese mixture on the bottom of a 9×13-inch baking dish.
  2. Lay down a layer of lasagna noodles.
  3. Spread another layer of the cheese mixture on top of the noodles, followed by a layer of shredded chicken.
  4. Repeat the layers, ending with a layer of cheese mixture on top.
  5. Sprinkle the remaining ½ cup of mozzarella cheese evenly over the final layer.
Baking
  1. Cover the baking dish tightly with aluminum foil and bake in a preheated oven at 375°F (190°C) for 45 minutes.
  2. Remove the foil and bake uncovered for an additional 10 minutes, or until the cheese on top is bubbly and golden.
Serving
  1. Let the lasagna rest for 8–10 minutes before slicing to allow the layers to set.
  2. Garnish with optional toppings such as ranch dressing drizzle, chopped green onions, or blue cheese crumbles.

Notes

Store any leftovers in an airtight container in the refrigerator for up to four days. To reheat, microwave individual portions or place the whole dish back in the oven until warmed through. For a quicker option, use no-boil lasagna noodles and add more vegetables like spinach or bell peppers for extra nutrition.
